Ginny’s Bistro and Wine Bar Coming to Easton

Ginny’s Bistro & Wine Bar, a new restaurant in Easton, is currently under construction.  Owner Thomas Campbell said the restaurant, located at 612 Northampton Street, is working hard to open as soon as possible.  A recent posting by the restaurant indicated all of their permits have been obtained.

The restaurant will serve a variety of tapas, salads, entrees, and desserts created by executive chef Peter Choida, who previously worked the kitchen at Ciro’s Bistro in Stroudsburg.  Mr. Campbell said after perusing spots in Allentown, he decided to head to Easton due to the variety of the art scene and burgeoning restaurant scene. 

Using an interesting twist in Pennsylvania’s terrible liquor license code, the restaurant will serve wine as a satellite location of Pinnacle Ridge winery (limited wineries in PA can have up to 5 satellite locations.)  The restaurant will essentially contain a small Pinnacle Ridge wine shop on the premise, with its own entrance, and customers of the restaurant can enjoy Pinnacle Ridge’s line of wines.  Patrons will also be able to BYOB if they wish to have something other than Pinnacle Ridge.
