Andrew Foreman and Marguerite Viola, co-owners of Switchback Pizza, are opening up shop at 525 Jubilee Street in Emmaus.  After spending three months in Italy learning traditional pizza cooking techniques, they opened a mobile wood-fired pizza oven that has spent the past few years serving up pies at local farmer’s markets.  At one time the Extreme Fitness Center, the new shop is undergoing a complete remake to serve up the same wood-fired pizzas the team has been making with their mobile oven.  According to their Facebook page it’ll be a month or longer until they’re up and running.
