Flying Egg breakfast spot coming to Main Street in Bethlehem

The recently closed Artfully Elegant shop at 451 Main Street in Bethlehem won’t be vacant long.  That’s because the same team behind the popular Cachette and Tapas on Main spots across the street, as well as Mesa Modern Mexican in Easton are aiming to open up a fourth location in the form of a breakfast spot.

In a recent interview, co-owner Cara Paredes revealed that “The Flying Egg,” a funky, upscale “boutique diner” will be arriving this spring, potentially in May.  “I’ve always loved breakfast eateries and I enjoy cooking breakfast food,” said Paredes.  Chef Rafael Palomino, who serves as the executive chef for all of the restaurants, is on board for this project and a chef de cuisine will be hired in the coming months.
Diners can expect eggs benedict and “other unique egg dishes,” a quiche of the day, waffles, sandwiches, salads, soups, and potential entree specials for lunch.  An assortment of coffee, espresso, and fresh squeezed orange juice will round out the beverage menu.  Breakfast will be served all day from 7am to 3pm and lunch will be available from 11am to 3pm.

The restaurant, which will be a mixture of booth spaces, tables, and a coffee/newspaper lounge, represents a third establishment on the same street for the husband and wife pair of Cara and Juan Carlos Paredes.  Why the attraction to the area?  “I grew up in Easton, which is now home to Mesa Modern Mexican on South 3rd Street. We opened Tapas on Main first in 2011 and absolutely loved Main Street. When we received an offer to open in the space where Artfully Elegant previously was, it was an opportunity we could not turn down. It’s such a beautiful building with amazing neighbors. From the other restaurants to the cute shops, we couldn’t imagine a better spot for a breakfast/lunch place,” said Cara Paredes.

She added, “We strive to bring great service, a fun atmosphere and delicious food together.”  We’ll keep you updated as the restaurant nears opening this spring.
